World’s 50 Best Restaurants in 2012 – 2012年全球50家最佳餐厅

Noma restaurant in Copenhagen, Denmark has been named the best restaurant in the world for the third year in a row by Restaurant magazine’s World’s 50 Best list, beating out top eateries in Spain, Brazil, Italy, the United States and elsewhere.

The S. Pellegrino and Acqua Panna World’s 50 Best Restaurants, produced by Britain’s Restaurant Magazine, were unveiled in the medieval splendor of London’s medieval after voting by a panel of more than 800 chefs, restaurateurs, journalists and food experts who rated chef Rene Redzepi‘s Noma as the “standard-bearer for the new Nordic movement.”  This year’s list, meanwhile, offered few surprises as the top three restaurants remain unchanged from 2011: after Noma comes El Celler de Can Roca and Mugaritz, both in Spain.

Redzepi is quickly following in the footsteps of Ferran Adrià, whose now-shuttered Catalan restaurant El Bulli topped the list five times and who became widely accepted as the best chef in the world. Redzepi serves a new kind of Nordic cuisine such as musk ox and smoked marrow, sea urchin and dill or beef cheek and pear. The 34-year-old chef is an ambassador for the New Nordic Food program set up by the Nordic Council of Ministers and has headed the restaurant since its 2003 opening.

The Noma approach to cooking is concentrated on obtaining the best raw materials from the Nordic region such as Icelandic skyr curd, halibut, Greenland musk ox and berries. The two Michelin star restaurant does its own smoking, salting, pickling, drying, grilling and baking, prepares its own vinegars and concocts its own distilled spirits such as its own eaux de vies. Noma makes systematic use of beers and ales, fruit juices and fruit-based vinegars for its sauces and soups rather than wine, and allows vegetables, herbs, spices and wild plants in season to play a prominent role in its cooking. Located on the ground floor of a renovated listed 18th Century warehouse in the old Christianshavn district of Copenhagen, the restaurant’s fittings and furnishings also embrace the Nordic spirit and atmosphere with smoked oak, stone, leather, water, glass and light.

The top North American restaurant went to Per Se, which placed at number six. Thomas Keller‘s New York fine dining palace beat out his Napa Valley restaurant, French Laundry, which placed at 43. Also on the top ten was Chicago’s Alinea (7) and New York’s Eleven Madison Park (10). Other notable American placements included Manresa (48) located outside of San Francisco, which returned to the list this year, and Momofuku Ssam Bar (37), Daniel (25) and Le Bernardin (19), all from New York City.

Here are some of the other highlights from The World’s 50 Best Restaurants awards, hosted by Restaurant magazine in the UK.

- Spain landed five restaurants in the top 50 list, including Arzak, whose head chef Elena Arzak was also named the World’s Best Female Chef.
- The Chef’s Choice award went to Mugaritz chef Andoni Luis Aduriz in San Sebastian. The award is voted for by the world’s 50 best chefs.
- Though British chef Heston Blumenthal saw his flagship restaurant The Fat Duck drop eight spots from fifth position in 2011 to 13th this year, the precipitous fall was compensated by the fact that his new restaurant Dinner by Heston Blumenthal in London shot straight to the ninth spot to take the Highest New Entry award.
- Aussie chef Brett Graham‘s London restaurant The Ledbury also rose 20 places from No. 34 to No. 14 this year, to take the Highest Climber award.
- Quay restaurant, which overlooks the Sydney harbor, took home the award for Best Restaurant in Australia.
- The US was represented by eight restaurants on the list this year. Chef Thomas Keller‘s New York restaurant Per Se was awarded the Best Restaurant in North America. He is also the recipient of the Lifetime Achievement Award.
- Asia had six restaurants on the list, led by Iggy‘s in Singapore, voted the Best Restaurant in Asia.
- Alex Atala‘s Brazilian restaurant D.O.M. in Sao Paulo claimed the title of Best Restaurant in South America.
- La Grenouillère in Montreuil-sur-Mer, northern France was named the 2012 One to Watch.
- New this year, the Slow Food UK Award, which recognizes restaurants that support small scale, sustainable producers, was presented to Steirereck in Vienna, Austria.

2012年全球50家最佳餐厅出炉,丹麦诺马餐厅Noma连续第3年夺魁,击败西班牙、巴西、意大利、美国与其他地区的最佳餐馆。

圣沛黎洛与巴娜全球50家最佳餐厅(S. Pellegrino and Acqua Panna World’s 50 Best Restaurants)是由英国“餐厅杂志”(Restaurant Magazine)评选而出。

在经过800多名主厨、餐厅老板、记者与美食专家组成的小组票选后,在古色古香的伦敦市政厅(Guildhall)公布结果,评审封雷泽毕(Rene Redzepi)主厨的Noma诺马餐厅为“新北欧运动的掌门人”。

诺马餐厅由哥本哈根市克里斯蒂安港一个18世纪船运货仓改建而成,2004年开张,从装修到食品都崇尚天然简洁。现年33岁的主厨雷哲皮(Redzepi)对食材十分讲究,坚持不用进口食材,只用丹麦和北欧时令新鲜食材炮制美食。

诺马餐厅也是丹麦唯一的米其林二星餐厅,每天有数千人要求定位。米其林二星餐厅意味着“值得舍近求远前往”,由旅游美食指南《米其林指南》评定,一星餐厅表示“值得造访”,三星餐厅则表示“值得专程前往”。

雷泽毕也因使用当地沿海或树林取得的在地当季食材而备受尊崇。雷泽毕说,他很开心可以3连霸,并表示他的主要哲学是使用在地出产的食材,烹调出美味 食物。他说:“这是跟时代精神有关的东西,这跟天然、人们种植食物与亲近食物有关。结合生机农夫并努力维持健康的生态系统,最厉害的好吃秘诀就在这里。” 不过,他又说,即使以崇尚有机闻名,Noma还是能摆脱北欧哲学,即美食是有点罪恶的自我放纵。他说:“永续性不是明确目标,我们是美食的殿堂,我们创造 这种地方,这没有什么错。不过在我们的世界,如果你说你热爱美食,喜欢美食对你带来的影响,你就该感到罪恶。这是新教徒的想法,天主教徒不这么想。”

以国家排名来看,西班牙与美国在前10名旗鼓相当,各有3间餐厅上榜。整体来说,前50名中,美国有8间餐厅,西班牙有5间。

以香水餐点闻名的西班牙吉隆纳(Girona)El Celler de Can Roca餐厅,在3兄弟共同经营下蝉联第2名。位于西班牙圣塞瓦斯蒂安(San Sebastian)的Mugaritz,虽然两年前遭逢大火蹂躏,这次再度拿下第3。

今年有8间美国餐厅跻身前50,名次最高的是纽约餐馆Per Se,这是凯勒(Thomas Keller)主厨开的餐厅,Per Se荣获北美最佳餐厅殊荣。

亚洲有6家餐厅上榜,在美食地图中占有一席之地。主办单位宣布将颁发新的亚洲50家最佳餐厅(Asia’s50 Best Restaurants)奖,颁奖典礼预定2013年2月在新加坡举行。

亚洲50家最佳餐厅奖也是由圣沛黎洛与巴娜赞助,受亚洲知名主厨欢迎,包括新加坡Iggy餐厅主厨曾广荧(Ignatius Chan),曾广荧获亚洲最家餐厅第26名。
