China’s economic boom brings with it a myriad of business opportunities. Every form of business — as long as it brings money, new technology or ideas — is in demand. Architecture, real estate and marketing firms are making it big, but as the city roars into the 21st century, there is a hunger for designers and artists; even Michelin-star chefs are sniffing out the Beijing kitchens.

If you’re looking to impress a new client, celebrate a merger, work out a few details away from the office, or a discreet destination to eat while discussing a deal? Some places were made just for this purpose. Here’s our pick of the ten best places in Beijing to wine and dine when there’s business on the menu.

Maison Boulud à Pékin - Internationally acclaimed chef Daniel Boulud's first foray in China

Ever since New York celebrity chef Daniel Boulud opened his first Eastern outpost just before the 2008 Olympics, there’s been little reason to go anywhere else in Beijing for French food. Housed in the former pre-1949 American embassy, Boulud’s refined “soul” food gleams brilliantly amid a landscape of mediocre French restaurants in Beijing — everything at Boulud from the food to the wine list to the service to the atmosphere is top-notch. Arrive early for your reservation to sip an aperitif in the parlor and admire the chic colonial decor. Entering the understated dining room, you’ll find yourself in the company of the city’s movers and shakers. You’ll find updated versions of classic dishes like coq au vin and French twists on contemporary American food like the signature “dB burger” — stuffed with foie gras and stewed short rib meat by executive chef Brian Reimer (Boulud visits Beijing several times a year to keep quality high). All of this comes at a hefty price, but you can expect to pay 25% less here than at Boulud’s New York flagship, Daniel, which some would consider a bargain. If that’s not enough to lure you, lunch and weekend brunch menus include set meals, which go for around ¥200.

This slick Japanese establishment, sitting squat in the middle of the central business district, is perfect for business lunches or dinners. Hatsune wins best Japanese restaurant every year as judged by local entertainment magazines, and it’s easy to see why. Expect a wide selection of mouth-watering rolls, fresh sashimi and bento box lunch specials starting at RMB 75, with selections ranging from fresh salmon sashimi and sushi, to grilled mackerel and diced beef. Ideal for a business lunch or, considering its ample selection of sake, an after-work celebration. The 119 Roll, with bright red tuna inside and out, topped with a divine spicy-sweet sauce, absolutely should not be missed. A word of warning: only go there if your clients are westerners or locals — they almost always love the funky fusion fare on offer. However, Japanese generally don’t, so take them to Yotsuba instead.
The Sanlitun branch features a “shoal of fish” display inspired by the work of UK artist Dominic Bromley and delicate Japanese-style prints embellish the walls and sofa coverings. A large bar adorned with taiko drums is stocked with sake, wines and spirits in floor to ceiling racks accessible by a moveable ladder (bartenders bang on the drums each time sake is served). The venue’s sole 12-person, glass-encased VIP room features an intricately woodworked sunken table, and a cozy terrace on the opposite side of the restaurant overlooks The Village’s main plaza area.

Alameda is famous for its business lunch (one of the best deals in town atRMB78 for two courses, RMB98 for three). The contemporary cuisine, with Brazilian roots — steaks aplenty — is stylishly presented, yet hearty in portion size. The fixed menu has more than a dozen appetizers and a dozen main courses, which span the globe in their influences. Grilled tuna belly with a funky aqua-colored spinach risotto in a Drambuie sauce is delectable, the wine list is pretty extensive, and the desserts — tarts and tiramisu — are orgasmic. Its reputation may have encouraged some of the staff to err on the haughty side of courteous yet the chefs — three hail from Brazil — are speedy. The funky, minimalist setting and the buzz from the other diners (it’s always crowded) creates a vibe that is conducive to a smooth business lunch.

Capital M, the latest outpost of Michelle Garnaut's growing empire, is one of the few restaurants in Beijing with both stunning views and a chef with versatile culinary skills

It took seven years for Melbourne-born restaurateur Michelle Garnaut (owner and founder of M on the Fringe in Hong Kong and Shanghai’s M on the Bund) to make Capital M a reality. The results appear to have been well worth the effort. One of the few restaurants in the capital with both stunning views and a chef with versatile culinary skills. Capital M has a front-and-center view of Tian’an Men Square unique in all of Beijing.  At the northern tip of the newly renovated Qianmen Pedestrian Street, Capital M serves up not only a gorgeous view, but a beautiful interior with terrazzo floors, steel columns, and a colorful mural by Richard Cartwright. Garnaut describes the cuisine as “comfort food” with an Australian and Middle Eastern flair; highlights include the crispy suckling pig and fesenjen, an Iranian stew with braised duck leg. Weekend brunches, served with champagne and freshly baked bread, are a delicious treat. Leave room for dessert: the pavlova, an Australian meringue, is legendary.

But don’t be fooled by the hotel location (Grand Hyatt Beijing). Fans claim this place is one of Beijing’s best for Peking duck, Here, the Peking duck (RMB 238/whole duck, RMB 148/half, plus 15% service charge) is prepared with crisp, rich skin without a trace of hanging fat – the succulent meat goes well with the delicate, moist and paper-thin pancakes. This ritzy establishment also serves delicious pork and leek dumplings. Aside from duck, try the popular “beggar’s chicken.” The wine selection is excellent as well, with wine by the glass options (RMB 75 for a glass of 2008 Vina Esmerelda) and exclusive bottles on offer. Reservations are recommended at this perennial readers’ favorite. Quite unexpected for a Chinese restaurant, Made in China does delicious desserts — the pear champagne and passion fruit sorbet packs a fruity punch. Right next door you’ll find the sleek Red Moon Bar, perfect for an aperitif.

One taste of the Beijing-style roast duck and the reason for Dadong Roast Duck Restaurant‘s fervent following becomes obvious—crispy, caramel skin over lean but juicy meat without the usual high fat content (trimmed down from 42.38% to 15.22% for its ‘Superneat’ roast duck, the brochure says). It’s intensely aromatic and does justice to this most celebrated of the city’s dishes. The birds come in either whole (¥198) or half (¥99) portions and are served in slices with a wide assortment of condiments (garlic, green onion, radish). Place the duck on a pancake with plum sauce and your choice of ingredients, and then roll and eat. An excellent plain broth soup, made from the rest of the duck, is included in the price. The food is wildly popular with both locals and overseas visitors. Just make sure you reserve a table in advance. The massive menu has close-up photos of dishes and English translations and is a dream to navigate. The English picture menu offers a wide range of other dishes, everything from the duck liver in brine, mustard duck webs,stir-fried shrimps to duck tongue in aspic, plus a number of excellent doufu (tofu) dishes with thick, tangy sauces.  This is one of the few restaurants in Beijing with a nonsmoking room.  If you want some privacy to discuss business, individual rooms are available upstairs.

The spacious first-floor lounge is a scene unto itself, with banquettes made for lingering over creative cocktails. With a new set of Matthews running the show, Aria has been given new life. World’s 50 Best Restaurants in 2012 – 2012年全球50家最佳餐厅

Noma restaurant in Copenhagen, Denmark has been named the best restaurant in the world for the third year in a row by Restaurant magazine’s World’s 50 Best list, beating out top eateries in Spain, Brazil, Italy, the United States and elsewhere.

The S. Pellegrino and Acqua Panna World’s 50 Best Restaurants, produced by Britain’s Restaurant Magazine, were unveiled in the medieval splendor of London’s medieval after voting by a panel of more than 800 chefs, restaurateurs, journalists and food experts who rated chef Rene Redzepi‘s Noma as the “standard-bearer for the new Nordic movement.”  This year’s list, meanwhile, offered few surprises as the top three restaurants remain unchanged from 2011: after Noma comes El Celler de Can Roca and Mugaritz, both in Spain.

Redzepi is quickly following in the footsteps of Ferran Adrià, whose now-shuttered Catalan restaurant El Bulli topped the list five times and who became widely accepted as the best chef in the world. Redzepi serves a new kind of Nordic cuisine such as musk ox and smoked marrow, sea urchin and dill or beef cheek and pear. The 34-year-old chef is an ambassador for the New Nordic Food program set up by the Nordic Council of Ministers and has headed the restaurant since its 2003 opening.

The Noma approach to cooking is concentrated on obtaining the best raw materials from the Nordic region such as Icelandic skyr curd, halibut, Greenland musk ox and berries. The two Michelin star restaurant does its own smoking, salting, pickling, drying, grilling and baking, prepares its own vinegars and concocts its own distilled spirits such as its own eaux de vies. Noma makes systematic use of beers and ales, fruit juices and fruit-based vinegars for its sauces and soups rather than wine, and allows vegetables, herbs, spices and wild plants in season to play a prominent role in its cooking. Located on the ground floor of a renovated listed 18th Century warehouse in the old Christianshavn district of Copenhagen, the restaurant’s fittings and furnishings also embrace the Nordic spirit and atmosphere with smoked oak, stone, leather, water, glass and light.

The top North American restaurant went to Per Se, which placed at number six. Thomas Keller‘s New York fine dining palace beat out his Napa Valley restaurant, French Laundry, which placed at 43. Also on the top ten was Chicago’s Alinea (7) and New York’s Eleven Madison Park (10). Other notable American placements included Manresa (48) located outside of San Francisco, which returned to the list this year, and Momofuku Ssam Bar (37), Daniel (25) and Le Bernardin (19), all from New York City.

Here are some of the other highlights from The World’s 50 Best Restaurants awards, hosted by Restaurant magazine in the UK.

- Spain landed five restaurants in the top 50 list, including Arzak, whose head chef Elena Arzak was also named the World’s Best Female Chef.
- The Chef’s Choice award went to Mugaritz chef Andoni Luis Aduriz in San Sebastian. The award is voted for by the world’s 50 best chefs.
- Though British chef Heston Blumenthal saw his flagship restaurant The Fat Duck drop eight spots from fifth position in 2011 to 13th this year, the precipitous fall was compensated by the fact that his new restaurant Dinner by Heston Blumenthal in London shot straight to the ninth spot to take the Highest New Entry award.
- Aussie chef Brett Graham‘s London restaurant The Ledbury also rose 20 places from No. 34 to No. 14 this year, to take the Highest Climber award.
- Quay restaurant, which overlooks the Sydney harbor, took home the award for Best Restaurant in Australia.
- The US was represented by eight restaurants on the list this year. Chef Thomas Keller‘s New York restaurant Per Se was awarded the Best Restaurant in North America. He is also the recipient of the Lifetime Achievement Award.
- Asia had six restaurants on the list, led by Iggy‘s in Singapore, voted the Best Restaurant in Asia.
- Alex Atala‘s Brazilian restaurant D.O.M. in Sao Paulo claimed the title of Best Restaurant in South America.
- La Grenouillère in Montreuil-sur-Mer, northern France was named the 2012 One to Watch.
- New this year, the Slow Food UK Award, which recognizes restaurants that support small scale, sustainable producers, was presented to Steirereck in Vienna, Austria.

2012年全球50家最佳餐厅出炉 丹麦餐厅Noma三连霸

2012年全球50家最佳餐厅出炉,丹麦诺马餐厅Noma连续第3年夺魁,击败西班牙、巴西、意大利、美国与其他地区的最佳餐馆。

圣沛黎洛与巴娜全球50家最佳餐厅(S. Pellegrino and Acqua Panna World’s 50 Best Restaurants)是由英国“餐厅杂志”(Restaurant Magazine)评选而出。

在经过800多名主厨、餐厅老板、记者与美食专家组成的小组票选后,在古色古香的伦敦市政厅(Guildhall)公布结果,评审封雷泽毕(Rene Redzepi)主厨的Noma诺马餐厅为“新北欧运动的掌门人”。

诺马餐厅由哥本哈根市克里斯蒂安港一个18世纪船运货仓改建而成,2004年开张,从装修到食品都崇尚天然简洁。现年33岁的主厨雷哲皮(Redzepi)对食材十分讲究,坚持不用进口食材,只用丹麦和北欧时令新鲜食材炮制美食。

诺马餐厅也是丹麦唯一的米其林二星餐厅,每天有数千人要求定位。米其林二星餐厅意味着“值得舍近求远前往”,由旅游美食指南《米其林指南》评定,一星餐厅表示“值得造访”,三星餐厅则表示“值得专程前往”。

雷泽毕也因使用当地沿海或树林取得的在地当季食材而备受尊崇。雷泽毕说,他很开心可以3连霸,并表示他的主要哲学是使用在地出产的食材,烹调出美味 食物。他说:“这是跟时代精神有关的东西,这跟天然、人们种植食物与亲近食物有关。结合生机农夫并努力维持健康的生态系统,最厉害的好吃秘诀就在这里。” 不过,他又说,即使以崇尚有机闻名,Noma还是能摆脱北欧哲学,即美食是有点罪恶的自我放纵。他说:“永续性不是明确目标,我们是美食的殿堂,我们创造 这种地方,这没有什么错。不过在我们的世界,如果你说你热爱美食,喜欢美食对你带来的影响,你就该感到罪恶。这是新教徒的想法,天主教徒不这么想。”

以国家排名来看,西班牙与美国在前10名旗鼓相当,各有3间餐厅上榜。整体来说,前50名中,美国有8间餐厅,西班牙有5间。

以香水餐点闻名的西班牙吉隆纳(Girona)El Celler de Can Roca餐厅,在3兄弟共同经营下蝉联第2名。位于西班牙圣塞瓦斯蒂安(San Sebastian)的Mugaritz,虽然两年前遭逢大火蹂躏,这次再度拿下第3。

今年有8间美国餐厅跻身前50,名次最高的是纽约餐馆Per Se,这是凯勒(Thomas Keller)主厨开的餐厅,Per Se荣获北美最佳餐厅殊荣。

亚洲有6家餐厅上榜,在美食地图中占有一席之地。主办单位宣布将颁发新的亚洲50家最佳餐厅(Asia’s50 Best Restaurants)奖,颁奖典礼预定2013年2月在新加坡举行。

2.那家小馆

盘点北京城里最拽的五家古香古色饭馆(图)

北京是一个兼容并蓄的城市,在这里生活的人们各得其所,您可以找到适合自己的各种类型的餐馆,今天给您介绍的以下这几处地点,统一的特点就是古香古色,那种情调估计只能用“拽”这个字来概括了吧……


新红资俱乐部餐厅 (Red Capital Club)   位于北京东四的九条66号。沿东四九条胡同向东摸黑走150米,见一黑瓦朱门宅第,没有任何标志,门前只停了一辆七十年代的老红旗车,推开大 门,是一个精致的小四合院,弥漫着政治僵尸的神秘气息,厢房是酒吧,沙发全是从中南海更新下来的前苏联式,单人沙发都可以合坐两头北极熊,所有的沙发都曾 磨出白色毛边,据说上面曾坐过多位国家领导。
北屋是吃饭的正房,高悬周南五个斗字:新红资——取“新红色资本家”之意。全是中南海前政要的家厨掌勺,如,邓家红椒鳝丝,杨家酸辣豆苗,刘家爆炒牛柳,另有刘姥姥进大观园吃的第一道菜,叫曹雪芹茄条,此菜有一种糊味,奇难吃,谁吃谁是刘姥姥...

后海16号四合院
位于紫禁城以东50米之遥的东华门95号。一楼是一个西餐为主的古朴大厅,一进去要先抢左手边一个双人座,因为桌边就是紫禁城的东华门,从窗子 望出去,晚上黑呼呼的城门楼子特象文明古国那么回事,不管多张狂的女孩,只要是初来,领到这座位一坐,一准能镇住。二楼是一个小酒吧,只有六七人的座位, 窗外可看见故宫角楼上挂着的铃铛。
只消往此一坐,多少往事涌上心头,不由你不大发思古之幽情。 一楼以下,有一个三十余平米的地下油画展厅——常人只要能看明白的作品此处一般不展,这是另类艺术家的“耶路撒冷”。

1、来此附庸风雅前要先温习一下英文。经理是一个白种美国人,长得有点《北京人在纽约》里被姜文爆打的那个“戴维”,但其汉语水平仅限于,“你好,请付账,不打折”等几句。
2、有亲美情结者最宜前往,有义和团遗风者则建议在家歇息吧。大厨和老板均是美籍华人,“911”之后对客人谈及中美友谊常常双眼红肿,谈及拉灯关灯之事则咬牙不已。足令反美人士食欲萎靡。
3、老外太多,且多是中国通,讽刺他们时要注意选用各省方言俚语。

 “紫滕庐茶馆”   初识紫藤庐,是在晚上。它所在的是京城难得的一处清雅宝地:故宫西门外南长街边,朱红窗棱、苇帘低垂,一副与世无争的姿态。
入门内,悠悠茶香沁人心脾,空灵的琵琶曲划开屋内的静谧。古色古香的家具和陈设引得我细细观看。旧木板门围出小巧而精致的玄关,潺潺流水中鱼红 浅映,左边一对清代黄花梨官帽椅足见主人的品位,对面古旧的红木装饰桌上,老式座钟、木雕台灯、青花瓷茶具在红漆木罐中的干花映衬下,看似无心摆放,却也 古朴雅致。轻掀粗布门帘,女茶师引领我们进一间茶室落座。茶室被清式花格镂空门板围合,互相之间似隔非隔。看茶师带着轻声细语解说的茶艺表演,品尝着清灵 淡雅的香茶,心绪很快归于平静,墙外的浮躁之气被驱散得无影无踪了。
再到紫藤庐,是下午。我见到了女主人张杰,一身中式打扮,散发着古典的秀美,如她的紫藤庐。我们对桌而坐,边品茶,边谈天,话题自然还是围绕着她的茶馆。
“这些是我先生的作品。”主人热情而直接,“我先生比我更爱茶,也爱做设计,开一家自己设计的茶馆是他的建议。”
模仿主人的动作,轻旋闻香杯,顿觉香气扑鼻,三口饮下品茗杯中的茶水,清爽之气久绕舌根。这种纯、净在平日里匆忙之间急饮浓茶时是体会不到的。
“日本茶道名气很大,但茶和茶道是源于中国的。我们的茶艺馆是要给来品茶的人创造纯粹的中国古典氛围,在这样的环境中感受茶文化的博大精深,让人慢慢想起身边留存着与茶同样动人的古老文化。”
主人望着四面花格门板告诉我,这些是从山西收购的清代旧门板,经过自己家具厂挑选、修整之后用在这里,总共48片,隔出了8间相对隐秘的小茶室。
门板上“轻声细语”的字条提醒客人品茶时不能大声讲话,这是主人一贯坚持的,她说,有些茶馆中玩牌、喧哗的现象很破坏气氛。茶之性情本淡泊悠闲,品茶需有与之相适的方式,品味的不只是茶本身,而且包括周围环境,所谓以茶托景,以景烘茶为妙。

“后海银锭桥酒吧”
此吧最绝之处,是没有任何名字,而且也无标志,老板姓白,特“个”——即使酒吧全空着,看你不入眼或你敢不预约就来,就算你是李嘉诚的小舅子, 也一律“没地儿”。这吧是木质旧式建筑,斜傍古老的银锭石桥,向南一排木窗,正对着后海的枯树冷月,一湖寒水让人直想到老舍自沉,在哥几个为老舍的名义干 了四、五杯之后,才想起老舍死的不在这!整个搞错了。
举杯望去,月光下的什刹海、后海浸淫在银色的寒辉,宋庆龄故居,郭沫若故居,叶剑英故居,沿着湖边错落地分布,更远处是恭王府和辅仁大学旧址。 在此处喝酒,准能喝出一种莫明其妙的破落贵族情怀,“什么什么三里屯?告诉你吧,那是农民扎堆的地儿”。
注意事项:
1、此处不可摆谱。连店小二也是个爷,瞅你不顺眼,怎么叫也不理你,拉起他问究竟,他一乐:对不起,咱耳朵有点背。
2、“方便”不方便,地儿忒小,另一个选择是,走个七、八十米到胡同区的公共厕所,但是,根据建筑师的设计,入厕者只能面北迎风,冬日里热气腾腾地一场下来,得打五、六个激灵,建议改喝红酒,减少新陈代谢次数。

“羊房胡同十一号”   没有任何招牌,只是在院门边能勉强辩认出一行歪歪扭扭的红字:羊房胡同十一号,顺着院门走进去,你就能吃到京城最有名的宫庭菜——“厉家菜”了,当然,如果你没有提前预定座位,对不起,咽口唾沫您请回吧。
在这个小四合院里,最初每天对外只做一桌菜,只供十来个人吃,吃客一律收每位200元,现在另辟一个偏房,加了两小桌,但一晚上也最多够二十个 人吃。主人厉老爷子——前清华大学建筑系毕业生,八十有二的厉善鳞教授选择在吃客埋头苦干时悄然踱步过来,突然用中英等国方言如数家珍,原来,厉家菜是老 爷子的祖父——西太后的内务府大臣厉顺庆爱吃的家常菜,经几代厉家人前赴后继地边吃边琢磨,形成今天的厉家菜。
从客人观赏的照片看,几乎所有的发达国家和一部分发展中国家的驻华大使均领夫人来过此处就餐。
注意事项:
1、厉家菜不太好吃但有颇特色,不可不去,不可多去。
2、厉家是旗人且为正宗遗老遗少,因此就餐时一言一行要注意民族团结,不能渲染大汉族沙文主义,也不可用“杨州十日”,“嘉定三屠”为由,吃完嘴一抹拒绝付帐。

北京便宜坊烤鸭集团有限公司是拥有10家京城餐饮老字号和1家三星级饭店的品群集团。
焖炉是地炉,炉身是砖砌成,大小约一立方米。当焖烤鸭子前,先用高梁杆的炭火将炉膛的温度焖烤合适。焖炉用的是暗火,技术性强,掌炉人必须掌握好炉内的温度。
后来便宜坊放弃了燃烧秫秸的焖炉技术,采用了电焖炉来烤制鸭子。挂炉用的是明火烧烤,容易掌握。焖炉烤的鸭子,外皮油酥,肉鲜嫩,肥而不腻,并出肉多。即避免了传统焖炉烟火气比较重的缺点,又保留了焖炉烤鸭鲜嫩多汁的特点。
现在位于崇文门的便宜坊是焖炉烤鸭的老字号了,对于焖炉烤鸭技术的改进没有仅仅停留在燃料上,而是在鸭坯的加工上下了很大功夫,推出了“花香酥”系列烤鸭,有茶香、莲香和枣香三种口味。
“花香酥”焖炉烤鸭还是值得一尝的,不仅是为了找寻那淡淡的花香,也是为了找一找焖炉烤鸭与挂炉烤鸭的不同。
便宜坊推陈出新的思路很有意思。清末,烤鸭除了“汤烧”,还有“葱烧”、“菜烧”,后来又有全聚德“加味汤烧”的尝试,都是在鸭肚子里下功夫, 最后都因为“汤烧”更能保留北京烤鸭肉质的清甜而淘汰了其它的方法。便宜坊的创新绕开了在鸭肚子里下功夫的思路,改外不改内,创新不可不谓大胆。

白魁老号饭庄是一家清真老字号饭庄,以经营烧羊肉为特色,创办人叫白魁。其前身为东长顺清真饭馆,清乾隆四十五年(1780)在隆福寺庙东侧开 业。光绪二十六年(1900)在老店对面开南号,称白魁老号(清真)饭庄,成为南、北两店。20世纪40年代时仅存南店。1957年公私合营,改名为“清 真白魁老号饭庄”。隆福寺街总店建筑面积887平方米,两层楼面,可同时容纳200位顾客就餐。在交道口、东四北大街、和平里、北新桥等处设有白魁老号分 店。“白魁烧羊肉”选用2-3岁西口羊,自配丁香、肉果、白芷等共24种调料,取肫寓、前腿部位,经清洗、紧肉、码肉、煮肉、煨肉、炸制6道工序烹制而 成,外焦里嫩,酥香可口,曾在全国食品展评会中获“第一类第一级风味食品”称号。1997年底,白魁饭庄制作的“椰蓉包”、“豆面糕”、“糖卷果”、“咸 卷果”被中国烹饪协会授予“中华名小吃”称号。

在正义路附近的北翔凤胡同里,有一家挺不起眼的四合院,外面没有广告牌,也没有华丽醒目的装饰。一块小小的门脸儿,写着一个小小的招牌“利群烤鸭店”。可就是这样的一个小地方,能让世界上的许多人,包括一些国家的重要官员也来此尝一尝烤鸭。利群烤鸭店就这样藏在胡同深处,却总是能招来源源不断的 客人。
北京利群烤鸭店,是由原全聚德的厨师张利群于1902年在自家的房子里开办的,张师傅曾经当过知青,属于“老三届”,由于讲质量,守诚信在中外宾客中建立了良好的信誉。
北京当下的烤鸭,可以分为老牌,新派和新新派三种。
全聚德、利群、便宜坊是老派。老派的鸭子,要有肉、也有油,皮要酥,肉也要甜。一个现象就是这些店的鸭子都是一只能片上两盘,因为有肉有皮的缘故。
利群和全聚德,同为老派,又有分别。烤鸭工艺啰嗦复杂,鸭坯要晾透,果木要陈化,一炉不能多烤……利群小小一家店,门前堆果木,鸭坯挂店前,明炉烘烤,一目了然……鸭皮固然酥透,鸭肉更有一种细腻粉嫩的甜美。
